Orange & Carrot Pulp Muffins

We have an abundance of oranges in the house at the moment, so every morning we've been making 2 litres of orange & carrot juice for the family.  On the downside that means a lot of leftover pulp.  So whats the solution?

Bake some muffins of course!



These muffins are Vegan friendly, as we replaced milk with soy milk and the egg with a banana.  So if you aren't hung up about being a vegan feel free to reverse the above.


Ingredients:

2 cups plain flour
1 cup soy milk
1 cup orange & carrot pulp 
3/4 cup white sugar
1/4 cup vegetable oil
3 teaspoons baking powder
1/2 teaspoon salt
1 banana mashed


Directions:

Preheat oven to 205 degrees C.


Sift the flour and baking powder and stir with salt and sugar in a large bowl.  Make a well in the center.


Mix together in another bowl all the wet ingredients - banana, orange & carrot pulp, vegetable oil & soy milk.  Pour into the dry ingredients well and mix quickly and lightly with a fork until moistened, making sure not to beat it.  It will be lumpy.  


Pour the batter into muffin cases.  


Bake for about 20 minutes. 


Makes about 16 medium sized muffins.

Cool & Ice, or just eat plain.  We mixed in another bowl some icing mixture and juice from 1/2 orange.  It was a bit runny so feel free to use much less orange juice.

Variations:

Add a handful of nuts, chocolate chips, sultanas or even dates.

How to make Raw Pesto Spaghetti

Hi Folks,

Thought I'd share with you a video I made with the kids to show just how easy it is to make Raw Pesto Spaghetti.  Hope you enjoy... there will be more to come in the future.


The equipment we used was a Spirooli to make the spaghetti/pasta and the Vitamix to make the pesto.  Google either item and you will find stockists to purchase them online.

Green Smoothie Beginner Kitchen Basics

Here are 3 basic kitchen items you may already own or can purchase on the cheap.  They are a great introduction to the world of green smoothies, especially if you are a little bit cautious about splashing out on fancy expensive equipment (it took me 1 year to bite the bullet and purchase a vitamix):



1.  Rocket Blender -   You can get these for super cheap on Trade Me NZ and you may possibly get it from Ebay too. Or you can try

This blender is a great starter for making green smoothies, the consistency can be quite thick but its a great starter and if you go on to purchase a more robust blender you can still keep this for grinding cacao nibs etc in the future for gourmet raw food recipes.

2.  Stick Blender - These range from anything between $10 or $50 AUD from you local supermarket or department store.  You can purchase this additionally to the above blender or just this one on its own.  I would definitely recommend getting just this one if you were weighing up your options between the two as this gives you more access to blending the greens up much more effectively.  

** These are also perfect for when you travel nationally or internationally, just throw it into your suitcase! **

3.  Water Filter Jug.  I got one on special for about $40 AUD with 3 replacement filters from Coles.  I'd definitely recommend this as you'll be using a lot of water to add to smoothies, juices and sprouting beans.  Plus you do need to drink at least 1 litre of water a day. 

 Tap water has chlorine added to it because its a cheap way of disinfecting the water, so whilst it blasts away all the nasties, its only replacing it with another nasty.  Apparently there have been links to cancer, asthma and skin disorders from ingesting tap water.  But don't take my word for it, you can do your own research on the subject.  All I know is I hate the taste of tap water and prefer filtered water kept at room temperature.

That's it!  3 items costing around $100 in total and you can blend your way to making delicious living green smoothies.  You may even own some of these items so BONUS it won't cost you a cent.  Obviously with better equipment you can make a better end product.
